
Happy National Pie Day! Yes, really!
Created by the American Pie Council, National Pie Day is dedicated to the celebration of pie. As part of our American heritage, this day is a perfect opportunity to pass on the love and enjoyment of pie eating and pie making to future generations.

Bev’s Chocolate Pie
2 cups white sugar
5 tablespoons unsweetened cocoa powder
1/4 cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract
4 egg yolks (save the whites for the meringue!)
1/4 cup butter
1 recipe pastry for a 9 inch single crust pie
4 egg whites
1/4 cup white sugar
Preheat oven to 350 degrees F (175 degrees C). In a saucepan, whisk together 2 cups sugar, cocoa and flour. Blend in evaporated milk and vanilla. Beat egg yolks, and stir into pan. Add the butter or margarine. Heat, stirring constantly just until butter is melted. Pour filling into unbaked pie shell.
Bake in preheated oven for 35 to 40 minutes, or until pie is not “wobbly” when shaken.
Beat egg whites until soft peaks form. Gradually add 1/4 cup sugar, beating constantly, until stiff peaks form. Spread meringue on pie. Return pie to oven, and bake until meringue is golden.

Does the pie have to be refrigerated after it is made? Or can it stay out until eaten?
It would be great if someone could create a recipe using Xocai Healthy Gourmet Chocolate. Unfortunately, heat kills the natural antioxidant value of the chocolate, so it would have to be a cold based process.

It’s two days later and I’m still thinking of pie too! I didn’t get a chance to make any on Wednesday so I’ll probably be doing it over the weekend :D
I want chocolate pie now! No fair. Between your blog and Marye’s I swear I’m surprised I don’t gain pounds physiologically. I really do want the pie though – that meringue stuff was my favorite as a kid.
