Easy Chicken Tortilla Soup In a Rice Cooker

I made a really easy chicken tortilla soup for supper tonight. I’m a big fan of tortilla soup, so I was excited to give this recipe from Aroma Housewares a try. Now that the weather is turning cooler I’m ready for more soups and I love it when I can throw everything into one pot and walk away to let it cook.

This soup had just a tiny bit of heat to it from the green chilis, but it was totally delicious with a few corn tortillas crunched up and thrown in. I bet some sour cream, or a little cheese on top would be great too.

Easy Chicken Tortilla Soup

  • 2 cloves garlic, peeled and minced
  • 1 medium yellow onion, peeled and chopped
  • 1 tablespoon extra virgin olive oil
  • 2 boneless, skinless chicken breasts, uncooked, thinly sliced
  • 5 cups chicken broth
  • 2 fesh carrots, peeled and chopped
  • 15 oz can diced tomatoes, undrained
  • 1/2 cup long grain white rice, uncooked
  • 3 1/2 oz can diced green chiles
  • 12 oz can kernel corn, drained
  • 7 oz can black olives, sliced
  • 2 cups tortilla chips
  1. Close the lid and press the Steam/ Cook button to preheat the Aroma rice cooker.
  2. Open the lid, using caution to avoid seam burns.
  3. Place the garlic, onion and olive oil in the inner pot and saute for 3 to 4 minutes, stirring with a long handled plastic spoon.
  4. Add the chicken and brown on all sides, stirring occasionally.
  5. Add the broth, carrots, tomatoes, rice, chiles, corn and olives. Close the lid and cook until the rice is done, about 20 minutes. To serve, place 1/2 of tortilla chips in each of 4 soup bowls and ladle the soup over the chips.

Serves 4

I made a few modifications to the recipe (of course I always make modifications), I used fire roasted tomatoes, and I left out the black olives since my husband doesn’t care for them. I also crumbled the corn chips on top of the soup, instead of putting them in the bowl first.

This is a recipe I’m definitely filing away to try again. I think I might have some of the leftovers in a wrap for lunch tomorrow.
