Gourmet Grilled Cheese

This recipe is from Veggie Teens: A Cookbook and Guide for Vegetarian Teenagers, a perfect resource for teenagers and their families interested in learning about health and cooking for a plant-based diet. Gourmet Grilled Cheese
Serves 1

Ingredients:

½ cup of grilled vegetables. We used red peppers, red onions, and asparagus for this sandwich
1 slice of cheddar or pepper jack cheese (thinly sliced)
Foccacia roll (2 ounces) sliced in half (or two slices of French bread)

Directions:
1. Place half of cheese on bottom piece of bread.
2. Top with grilled veggies.
3. Top with remaining cheese and the other piece of bread.
4. Grill sandwich in a hot skillet or panini grill.

Nutrition analysis per serving: 311 Calories; 14 Fat; 12g Protein; 28g Carbohydrate; 4g Fiber; 34mg Cholesterol; 474mg Sodium
