Nata de coco

rsz_img_1615.jpg

Japan sells this weird product that I imagine is also sold in other countries. called nato de coco.  It is sort of like a tough coconut jelly that is sold in a light syrup.  It goes well with fruit or other deserts like yogurt or pudding.  The only question is how is it made?  I heard one version of the manufacturing process but I am not sure if it is the truth.  Before I go spilling the beans on the story that I heard, does anyone else have any ideas how it is made.  Warning, you may never look at coconut the same way again.

You can use other juices to make nata…. many many years back nata de Pina made from pineapple juice was available in the market. I have seen nata made from orange juice many decades ago in germany made by a Filipina

A quick treat of Nata de Coco is to mix it with a can of evaporated milk and crushed ice. Try it!

we are buyers of nata de coco during it’s boom in the market but cut short when news spread out that it was laced with chemicals like chlorox or other whitening liquid which is not safe to humans, but it is not true since nata is for all i know was made up of good bacteria that grows 12 to 15 days, it was fermented in a room with fresh air coming in and out, but if you are not lucky enough and you have bad or say dirty sorroundings and materials like plastic containers, dirty hands, it will not grow or solidify into soft gell, that is why during those times, export to Japan was stop and local growers where deprived of their source of livelyhood because of this gossips that made up of a typical filipino who did not think first before saying anything. Bakit kamo eh di ask me na lang personally, see you all!!!

Hmm. Somehow, A scientist in the kitchen’s comment wasn’t here when I made mine.

Nata de coco is made by fermenting coconut water. This product was introduced to Japan from the Philippines in the early 90s but is now found everywhere. Some claims nata de coco is a health food – high in fiber, good for the digestive system, low in calories, no cholesterol.

Isn’t it just a fermented product, like yogurt or beer?

It’s from coconut cream fermented with Acetobacter xylinum. The bacteria forms a lot of those delicious polysaccharides that makes up the nata de coco.
