We already know that onions contain quercetin, an anti-oxidant that has been demonstrated to help combat colon cancer, as well as cancers of the esophagus, mouth and throat, colon, breast, ovary, prostate and kidney. And it doesn’t stop there. I came across another article showing that, although they can bring you to tears, the many other medical reasons you should eat more onions.
Onions are a terrific source of the mineral chromium, essential to glucose metabolism and insulin sensitivity. Onions, with 20 percent of your daily chromium requirement in one cup, are a valuable ally in the fight against diabetes and heart disease.
This is important to know because onions are fairly high in carbohydrates as vegetables go. I have heard from readers who find that eating a dish rich in onions will cause a rise in their blood sugar, but clinical studies show that over time, onions lower blood glucose levels.

I am diabetic and I love pasta. I used to think I did not like onions but have come to replace pasta with onions. I now love to cook with onions and have found that I rarely crave pasta when I replace it with onions, maybe it is just me but I have dropped weight and feel much better now that I have a replacement for starchy noodles. I know I am not perfect but this may be of help to others that like pasta and try my alternative.
