Orange Marmalade-BBQ Ribs

When I’m making BBQ dishes I’ve gotten in the habit of experimenting with the BBQ sauce. I’ve add other components for more flavors. I’ve mixed together BBQ sauce and Italian salad dressing for chicken before and it was quite a successful experimentation so I figured I’d do something new for the ribs I bought from the pork butcher place the other day too.

INGREDIENTS :

  • ribs (quartered)
  • water for boiling
  • 3 cups bbq sauce
  • 2 squirts of honey
  • 2 huge spoonfuls of orange marmalade
  • a pinch of red pepper flakes (optional)

I bought a pack of ribs ($8 worth) that has been quartered by the butcher. If you buy the ones from the grocery store, I suggest you cut them in quarters so the ribs will fit in a boiling pot. BTW, I didn’t use all the ribs. I still have 4 quarter pieces n the freezer.

Put the ribs in a pot, add water, enough to cover the ribs. Put the lid on and boil for 2 hours. Make sure to check si it’s boil over and make too much mess in the stove :) .

While that’s boiling, add bbq sauce, orange marmalade, honey, and red pepper flakes in a bowl. Whisk them all together. Cover with a saran wrap and store in the fridge until the ribs are ready.

Once the ribs are boiled, drain the water. Preheat the oven to 365°.

Place ribs  in a roasting pan. Generously brush each sides of the ribs with the orange marmalade and bbq sauce mixture. Transfer the ribs in a foil-covered sheet pan. I didn’t do this step so I had to soak the roasting pan for days to get the baked bbq sauce out. I’ve learned my lesson. Using  a foil-covered pan makes cleaning up easy peasy. I should’ve known, oh well.

Bake the ribs for 35 to 40 minutes. Or grill ‘em up outside. It depends on how the weather is.

The ribs came out sweet and tangy and finger-licking good. Cut them in individual pieces once cooked of course.

I just couldn’t help but comment here about boiling ribs. I used to boil my ribs before cooking them, either on the grill or in the oven. THEN I really got into cooking and it’s my favorite thing to do and BBQing has been my speciality. I’m sorry but when you boil ribs all you’re doing is boiling the flavor out! I know it takes a little longer to grill, smoke or just oven bake, but the flavor is so worth it!! I’m smoking ribs tomorrow and was looking for a Orange Apricot Marmalade Glaze as I’m getting tired of BBQ sauce when I found this site. I will do the glaze but sure as heck won’t be boiling my ribs, they’ve been in the fridge for 2 days marinating in my own rub.
