I have another recipe for you today to help you use up all that zucchini sitting on your counter. It’s one of my favorite lunch recipes all by itself. It makes a great side dish for dinner, or you can throw it in a wrap, serve it over rice, mix it into a pasta dish, or throw it on a salad. Leftovers are great mixed into eggs for breakfast.
Sautéed Mushrooms Carrots and Zucchini
- 2-3 cups fresh mushrooms, sliced
- 1-2 cups fresh carrots sliced
- 1-2 cups fresh zucchini diced
- 1 clove of garlic, peeled and minced
- 1/2 of a medium onion
- 1 Tablespoon of olive oil for sautéeing
Add the olive oil to your skillet and heat it up on the stove top with medium heat. Add in the onions and garlic, and let them brown and carmelize for a minute or two for added flavor. Add the carrots, mushrooms, and zucchini and sauté for a couple minutes, or until cooked to taste.

I just recently got into grilling zucchini after reading a recipe. It’s so easy and tastes delicious. Just simply olive oil, sprinkle of salt and pepper goes a long way! Definitely going to have to add the other ingredients you suggested and give it a try!
