
This thick dip, while not technically hummus, tastes just as good and is extremely easy to whip up. It goes great with pretty much anything — pita chips, vegetables, even potato chips!
Edamame “Hummus”
2 cups shelled frozen edamame, cooked per package directions
1 cup silken tofu, drained of excess liquid
1 avocado
1/2 – 1 tsp kosher salt, or to taste
3-5 cloves of garlic
1/4 cup extra virgin olive oil
1/3 – 1/2 cup lemon juice
2 – 3 tsp cumin
dash cayenne
Place edamame, tofu, avocado, salt, garlic, oil, lemon juice, cumin and cayenne in a food processor and process until very smooth, approximately two minutes. Season with additional salt and pepper, and add more lemon juice if desired.
For a change of pace, add a small jar of marinated artichoke hearts in with the initial processing
