The best peanut butter cookie recipe ever? O.k…I know it is an election year and you are feeling a little overwhelmed with empty promises, but this one is not empty. Really. No. Really.

If you like peanut butter, (and really, who doesn’t?) these are the cookies for you. They are, depending on how long you bake them, chewy, crispy, or somewhere between. The peanut butter is intense. And, I use them as sandwich cookies, sandwiching them together with peanut butter mixed with honey. The are also great just single with a tall glass of organic milk.
The Best Peanut Butter Cookie Recipe Ever
2 1/2 c flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c unsalted butter
1/2 c vegetable shortening
1 c peanut butter
1 c sugar
1 c brown sugar, firmly packed
2 eggs, beaten
1 tsp vanilla
Preheat oven to 350
Stir together dry ingredients.
In mixer cream butter, shortening and peanut butter until smooth. Add sugars and continue beating until well blended. Add eggs, one at a time, then vanilla. Add gflour mixture and blend well, you may need to do that part by hand.
Shape dough into 1″ balls. Place on the silpat covered baking sheet 2 inches apart. Flatten with a ford dipped in flour and then flatten the other way to create cross hatching.
Bake for 8-10 minutes for chewy
10-12 minutes for crispy/chewy
and 12-14 minutes for crispy but watch carefully. Cool completely. about 6 dozen.
Now, if you want to make sandwich cookies make a spread of equal amounts of peanut butter and honey (or try sandwiching with ganache..yum) and put two cookies together with the filling in the middle.
Don’t eat them all before the kids get home.

I just made a test batch before they (the cookies) ship out to Iraq. And they are THE BEST I have ever had. Not too dry, I like mine a little crunchy so I did 14 mins. Perfect! You weren’t lying:)

I’m hesitant to make these because they use shortening, although they look absolutely fabulous. I know Crisco recently reduce their shortening to 1g of transfat in 12g of shortening (pretty sure), but I’m still not really lookin forward to tryin that.
I have one question though. I’m sure I can figure out how to flour my Ford, but won’t the cookies be a little bit…ruined if flatten them with my truck?

These sound like THE perfect PB cookie! Just wondering…how would these cookies handle having added goodies like M&MS or chopped peanuts? Even without added goodies, I’ll be mailing these yummers to nieces and nephews working and studying all over the world. :)
I halved this recipe as it is just my daughter and myself, but accidentally put in a whole stick of unsalted butter. The cookies were amazing!! They were crispy and simply melted in our mouths. We ate half the batch before the second was finished baking! Can’t wait to see how they taste with the recommended amount of butter – next time.
Me and my mom were looking for the perfect recipe, we got out six cook books and looked through them all, then she compared the ones to the others of the peanut butter recipes, we narrowed it down to one cook book. Then I google-lated “The Best Peanut Butter Cookie Recipe Ever” and found this site [secound on the list!] so I checked it out and it was the same as the one we found in the cook book!!

Now, I haven’t even thought about, or had PB cookies since, um, maybe since I was a kid. Wow. I should make a half batch of these. We don’t eat cookies when we make them so a half batch might work out. I remember how good they are warm. But I like mine chewy.
