Whoopie Pies

By request, my whoopie pie recipe. I don’t claim they’re healthy in any way and I don’t make them often, but they’re a big hit when I do.

Whoopie Pies

2/3 c shortening
3/4 c sugar
1 egg
1 tsp vanilla
2-1/4 c flour
1 c Quik chocolate drink mix
1 tsp salt
1 tsp baking soda
1 c milk

Cream together shortening, sugar, egg and vanilla. Mix together flour, chocolate mix, salt and baking soda in a separate bowl, add to creamed mixture, then add milk. Add by tablespoonful to parchment covered baking sheet, bake at 400 degrees for 8 minutes.

Filling:

2 c powdered sugar
1 egg white
1/2 c shortening
1 Tb butter
1 tsp vanilla extract
1 Tb flour
2 Tb milk

Mix together fast until light and fluffy. Assemble cookies. Makes about 18 cookies.

Although I know the chances of getting sick from it are extremely low I don’t feel comfortable using the raw egg white for the filling, so I add a little bit more milk to the mixture instead and it seems to work just fine. One of my seven year-olds calls these cupcake top cookies.

      Ice cream is good with any kind of cookie.

    Those look good! I think the Quik would make them more milk chocolatey, whereas the Hershey’s special dark makes them more dark chocolatey? So how long do they last at your house? ;)
    They look a little lighter than mine in the picture…but oh my…so so good! ::::whine:::I miss my camera.
