How MS Diagnosis Inspired a New Cooking Method

It wasn’t until my health went that I was able to gain control of my weight in a healthy way. Once I gained that freshman 30 in college, it seemed to take a lot of exercise and regimented dieting to get it off and then to keep (most of it) off.

I favored Lean Cuisines in my freezer, Crystal Lite in a pitcher in the fridge, Diet Coke, and Equal in my coffee. In short, I loaded my body with additives, preservatives, artificial colors and flavors, and even what I’ve since learned to be toxic substances.

Then one day I awoke blind in one eye.

I was 29. A business owner. About to be a bride. And diagnosed with multiple sclerosis.

I decided that the only way I could handle this prognosis was to be as proactive as I could and try to keep my body healthy and strong. I learned that the best way to build and maintain health for any body–be it weakened or strong–is to eat real food instead of processed foods.

Because MS causes fatigue, I found a way to easily and quickly prepare and cook whole foods. I patented the method and called it “Glorious One-Pot Meals”. 

Once I began eating this way, not only did I see tangible improvements in my health, but my weight dropped off and stayed off as an unexpected bonus. Not only have I not had an ms exacerbation since 2001, but I after having two 50-lb pregnancies I’m back to my pre-pregnancy size 4 pants. Without counting calories, shunning carbs, or giving up chocolate!

Although this classic edition is no longer for sale at my website (you might still find it on Amazon for a time), the next edition will be released January 6th from Broadway Books (a Random House Imprint).
